The recipe I have prepared for you guys today actually came to fruition a couple of weeks ago. I knew ahead of time that I wouldn’t be able to prepare meat based meals for awhile, so I figured I would stock up so I wouldn’t leave all you meat-heads high and dry! Enter my Buffalo Chicken Quinoa creation.
It only involves a few simple ingredients, the most magical of all is my not so secret weapon Bolthouse Farms Yogurt Ranch Dressing. This can be purchased at either Kroger or The Shape Shop on 9th Ave.
45 calorie ranch dressing that tastes like ranch?! Can’t you hear the angels singing?
Below are the ingredients, other than cooking the quinoa according to the package directions, chop the celery and avocado and combine all ingredients in a bowl and stir. The recipe yields about 4-5 servings.
***Remember, don’t actually use ranch…use the Bolthouse dressing or the ranch substitute (http://marshallcampusrec.wordpress.com/2013/01/28/healthy-super-bowl-recipes-yes-theyre-real/) that I talked about in the Super Bowl blog.
