Now that I’ve been able to reaffirm my relationship with meat (specifically chicken), I have been doing all kinds of experimenting, and today I want to share one of the more amazing chicken recipes I’ve ever tried. I originally found this recipe on Pinterest, but it comes to us via the blog, elly says opa!. As you can probably tell from the title, this recipe is for Jalapeno Popper Chicken. I initially loved the recipe because overall it seemed pretty easy, delicious, and cheap (and who doesn’t love a giant jalapeno popper??). Once you make it, you’re going to love this recipe for all of those reasons and more! As you’ll notice, the recipe serves two. So you can prepare this for you and that special someone (I actually did end up making this for me and my old ball and chain for dinner the other night…he loved it), if you want to make it for more people, you can double or triple the ingredients, OR you can just make it for yourself. You can get two separate (and filling) meals out of this. If it were me just making it for myself, I would make the recipe, eat one of the chicken breasts for dinner, then I would save the other chicken breast and chop it up to use on a salad for lunch the next day! Like I said, I had to feed a guy that is always hungry so I had to include some side entrees….but overall this recipe is one that is definitely being saved in the, “Recipes That Christine Will Use For The Rest Of Her Life” book…and it should be in yours as well! Although I’ve never met “Elly”, I would like to thank her for bringing such a wonderful recipe into the cooking world.
