Pesto Ranch Crockpot Chicken

For today’s recipe, I’m bringing back my good buddy, the Crockpot I found this delightful dish on the Picky Palate’s blog, and it is healthy, delicious, and quite possibly the cheapest crockpot recipe that I’ve seen yet (the Italian Chicken is a close second).  All you need is four ingredients and then your choice of a side dish.  On her blog, she just paired the chicken with some mashed potatoes and a side salad, also a great choice.  When I made the chicken I topped it with some feta and had a side of pasta salad (because that’s what I had on hand…boy would I love some homemade mashed ‘taters!).  

Click here for the original recipe. Just mix a jar of pesto with a packet of Ranch seasoning mix and a 1/2 cup of chicken broth, and pour it over 8 pieces of chicken (I even started out with frozen…man do I love the crockpot).  


I fed myself and four other man-boys with this recipe, I was the last to eat and they left me with one piece of chicken, which happened to be the smallest. Some gratitude. Either way, the chicken was deeeeelicous. A statement agreed by all! If you have leftovers, this chicken would be perfect to shred and put on top of a salad. So grab your crockpot and your FOUR ingredients, and get to cooking!
